10 years ago, I was living on a meager $600/month.

Beans. Black beans, red beans, pinto beans, all beans. I ate so many beans I’m surprised there are any left on the planet.
white rice.
Yogurt.

My most standard meals would be:

I grew up very poor. My mom would make giant pots of stews like lentils and split peas and it would last for days. Just getting thicker and thicker as the week went by

We use to cook tortillas on the stove top like this

We drank a glass of milk with every dinner (looking back it probably helped make us feel full). But sometimes when the gallon of milk got halfway empty my mom would fill the other half with water. I hated that! Watery milk.

My mom did her best and was really good about making it stretch. I've learned a lot from her. She knew I hated bologna and she would fry it in a pan and somehow make our sandwiches bearable. If on a Monday she made a stew we would have stew sandwiches for days and it never got old somehow. I still to this day like mayonnaise and sliced tomato sandwiches haha.

Having grown up poor in small-town America mostly during the 80’s I can offer my own perspective on this.

**EDITED TO ADD** I never claimed I had it worse than anyone else. I simply answered the question that was asked. My family was poor when I was a child we lived in America and this is what I ate. No comparisons or competition are necessary.

Over the centuries poor people around the world were traditionally thin because they couldn’t get enough food of any kind. This has now reversed in the United States with poor people having a tendency to be overweight (there are obviously many exceptions) because the cheapest food has a lot of fat carbohydrates and sugar in it. Better food costs more money. Also poor people are frequently extremely busy because they are working more than one job and so many rely on prepared foods that take less effort to cook.

Spaghetti with bottled sauce is a very inexpensive meal quick to make and it’s filling. But spaghetti is pure carbohydrate and bottled pasta sauces are made with a lot of sugar to counteract the acid in the tomatoes.
