The problem are the parasites. Rainbow trout even is treated properly it has parasites when eaten raw. Salmon if handled properly does not.

So what you're saying is don't eat salmon at sushi places in China anymore... Maybe I'm just ignorant but I thought the color and texture of salmon was pretty recognizable. Trout doesn't look or taste much like it at all

The colour of the flesh is very similar taste is similar to although trout is milder.

I don't know about you but I'm not particularly eager to contract tapeworms/Diphyllobothriasis.
Regulations in developed countries require sushi grade fish to be frozen before consumption specifically to kill such parasites (example safety notice from the BC Centre for Disease Control). The issue is that farmed salmon is usually exempt from such requirements because there's no risk of it being a Diphyllobothrium carrier.

In the UK a few years ago we had a scandal when it was found out a rather large amount beef products had horse meat in them.
If only the government had thought of just reclassifying horses as cows. They could have saved a lot of hassle and investigations.

A significant portion of people who want sushi seem to be completely fine with some fishy bit on a bit of rice.

I can totally tell the difference between a wide variety of fish but over 90% of everyone I know not only can't tell but sincerely does not care.
