Because many people have not been to the most rural parts of China, what would suprise us if we traveled there?

Fresh air. This will surprise you if previously you’re living in first and second-tier cities.
A lot of good sceneries. It’s just as depicted in Chinese traditional movies. Sometimes it really is surreal.
Toilet. Please brace yourself if you wanna visit a public toilet in China rural areas.
Friendliness. People are friendlier but somehow shyer. You can expect a lot of smiles but at the same time, a lot of blushings.
Natural foods. Go for it and try it yourself. I personally don’t like it that much. My taste-bud is already adjusted to city food products. They do have restaurants, but you won’t find so many options.
Cheaper. You’ll find anything is cheaper than what you can afford in the first and second-tier cities.
Less internet. Some still provide, some are not. So just prepare yourself for this. Or at least prepare for a slower internet connection.
Staring. They’ll stare at you out of curiosity (especially if you’re not Asian-looking).
No English. Don’t expect them to speak English.

Amazing food.
Depending on where you are, a surprisingly large amount of them WILL NOT SPEAK MANDARIN. Your class in Chinese means nothing to them. It’s why I’m always suspicious when “Mandarin” is listed as the most widely spoken native language in the world - they conveniently mash together a bunch of “dialects” that sometimes sound nothing alike. When my grandmother was alive, I understood nothing she said - she spoke the Wuhan dialect, and I spoke Beijing Mandarin. When I traveled, I subconsciously assumed that they all knew how to speak Madarin deep inside. News flash - they didn’t. I got by on hand gestures and facial expressions when passing through.
Internet access is almost nonexistent.
Most infrastructure can be nonexistent.
These people are completely apathetic as to what is happening around them. Xi extended his term? Some people don’t know it happened. Recent crackdowns or letups on major things? No idea. I sometimes think they wouldn’t know if the entire government was overthrown and half the world fell off the face of the Earth.
That’s as many as I can think of. I might think of more later, I dunno.

The food there is great. I went to Kunming and found Halal food (beef keema curry) that tasted really similar to Bangladeshi food.
