Well let me sum up some of the consequences if China didn’t exist, and you will be surprised how influential China is on the world.

First of all, the most noticeable difference on the world map is a big gap where China would be:

The results of this are most noticeable for Russia and Japan, as they now have a way stronger position in the global trade market, because they are able to trade much easier in big quantities with the rest of Asia (Considering China is now replaced with sea)

Now don’t get me wrong, I have nothing against Chinese people, but if China didn't exist, it would mean that the 1 billion+ people living in China wouldn’t exist either, and that would be better for the world looking at nature.

Alot of chinese inventions would have to be discovered by others, some might not be discovered. I mean we know that some chinese inventions / discoveries from Han or Tang times did not make it to the west till a millenium later.

But my real concern is chinese food and that just makes me weep to think it would not exist. Depending on if you mean just the people did not exist and others would take over the territory or if the whole landmass would not exist either i get sadder. At least if others took over the land then there would probably be some similar cuisine depending on which of her neighbours replaced her. But if the whole landmass was missing i wonder how her neighbours cuisine would look like since alot of them were influenced or adopted chinese cooking.

Assuming that you meant the land of China doesn’t disappear and only Chinese people and culture are wiped out from history, here are some of the things that might happen:

China has great contributions to civilizations. Some of them are as basic as gunpowder, printing and compass. Since we are thinking a world without China, we can say that these inventions will exist later in history, perhaps never, and probably we wouldn’t have the same technology in this paralel universe at 2016.

If China as we know it did not exist, but the land that China is situated on still existed, then another civilisation may or may not rise to take its place. This is provided that the ancient ancestors of the Han Chinese never existed in the first place.

If you're referring to the disappearance of the landmass that comprises modern day China, well who knows what would happen. One thing is for certain, there'd be less land for us to cultivate and to build cities.

I guess that you mean what if Chinese culture and history didn't exist so let's assume that in an alternate timeline, the ancestors of the Chinese who established Chinese Civilisation never existed. Well, a new culture, cultures, country or countries will rise. They would speak a very different language and have very different traditions and cultures.

Humans tend to follow a pattern in regards to building civilisations so this much is certain.
