I am going to China in the summer as part of a 1 month summer program for my college. I had a buddy that went 2 years ago to China and he said the first week he could barely get out of bed because he got horrible food poisoning from one of the dinners he got. And my dad went to China on business a few years ago and was told by his customer to bring his own food because most Americans that go to china get food poisoning because their bodies aren't used to the poor sanitation and food quality. Basically: I don't want to get salmonella, or really bad food poisoning while im there. Im sure there are some places in China that my stomach could handle, but how do I know what I can and cannot eat? Thanks

I have been to China a four or five times over the years, to Shenzhen/Hong Kong, Shanghai and the surrounding area, and Sanya and did get very sick once, but not from the food. The plane ride is your biggest concern as long hours with many passengers in a closed space. You might consider what some Chinese do, which is to wear a surgical type mask on the plane and that may help.
For food, NEVER a street vendor no matter what. There are a lot of them. Avoid the small cheap shops. Feel free to visit the variety of American fast food whose quality of food is higher in China. I liked the Japanese Teppanyaki restaurants and never had an issue. Most of the better quality places are quite safe. If going to a noodle shop, it should be hot food. If the food is not served hot in a restaurant, it is a bad sign. I did takeout from a Walmart counter with no issues. A lot of them have a cheap take out with good food. The water can be an issue in some places so avoid it unless a commercial building or bottled, and beware of the ice. You can ask if a restaurant is using filtered water as a good indicator.
If a restaurant looks dirty, then the food is dirty. It is a good idea to wash utensils in hot water and Chinese restaurants tend to be very customer accommodating in asking for things. If you need an interpreter, don't be ashamed to ask your hosts for help. The Chinese people are warm and friendly and always treat their guests with the highest of honor.
There were some good hot soup restaurants.
I found the chicken rather bony and scrawny and beef to be often grisly and fatty, so again, the better restaurants have much higher quality. The prices were cheap outside the Western sections.

The most important thing is to go to big cities. If you eat at established restaurants you will be fine. Also only eat at places with good safety rating...that is actually something really hard to get unless you are a big chain and can just pay for it. If you cook wash all the vegetables and avoid eating peels. Don't eat at places where you don't see any people during meal time and avoid places which look dirty....if you can see filth imagine how much filth you can't see. I have been living in Shanghai for 2 years and just got food poisoning 1 time and it was from my school cafeteria. Food safety is definitely an issue here but the standards and prosidures are improving year by year. The main issue is a lot of the places with bad sanitation are actually not legal.

In Asia. Have a good nose. Sniff look the place over. Only eat food that is hot. Above 160f. Fresh cooked not left to set out & cool. Drink bottled water. No ice in drinks. Only drink from the bottle or hot tea or coffee. That is the basics. There water can do you in as you are not use to it. Same can happen in America. Just moving to a different area. Water change. You do not have the right bacteria in your small intestine. For that area. These take time to get with travel. They keep you from becoming ill. That is why it is very important to eat only fresh hot food. Just set out at the small street cafes. Wash your hands often, carry your own toilet paper, Wrapped in tinfoil. Use the micro wave in your room to heat frozen diners for a snack. Or do like me. Drink the water, eat the food if hot, enjoy. But I have traveled so much I have all the right creatures in my small intestine to keep me alive so far.

Better don't go! I live in Hong Kong and haven't been there for 20 years. Everything is fake and the restaurants use oil found in the sewage system to cook, very disgusting !

Don't buy the fast crap food from roadside sellers unless you think it's too delicious to resist.

It's worse than you think. It seems the toilet seats are varnished with something made from poison sumac. The Chinese are not sensitive to urushiol, so they are unaware of the problem, but tourists sometimes get an inflamed bum.
