All the principle weapons of the Japanese warrior require two hands: Bow (yumi), spear (yari), Glaive (and possible halberd) (Naginata), sword (tachi,katana). This does raise the question - why didn't they choose / use single handed weapons?

The purpose of it was mainly to protect against arrows. But why did they decide to wear shields instead of holding them in your hand like for example the European knight? I think the main reason is that differently from European knights the samurai was also an archer. Differently from swords and spears the bow is the only weapon that you can’t use if you’re holding a shield. Yes, they also used the katana but that was far from the primary weapon on the battlefield. So because they needed to use the bow a lot they chose to use pauldrons instead of normal shields.

You had to be able to move your arms enough to use a bow while wearing armor, which means that there were some gaps in the armor. When a samurai would charge in with his spear he would have his upper body in a position that doesn’t let arrows enter the gaps but only hit the pauldron, the helmet and the chestplate (The draw weight of Japanese bows wasn’t as strong as for example English longbows so the arrows couldn’t penetrate the armor. The archers hoped on hitting the gaps in the armor.)
