The acceptance of a culture, including itsculinary art, grows with its economic prowess and spheres of influence. That’swhy when the Japanese restaurants came on scene decades ago, it gainedpopularity very soon, since Japanese were flush with money in the 80s and theirshopping spree made many Westerners associate everything Japanese with highquality. One thing embarrassing for Chinese overseas was being mistaken forJapanese in the 90s and 2000s.

Generally speaking, those inCalifornia, under the influence of their Chinese co-workers, learn toappreciate the tingling sensation on their tongue from Sichuan peppercorn. But,the southerners and northerners having lower exposure to Chinese still have anaversion to certain unique mouthfeel and aroma from real Chinese food. Forinstance, some American teenagers who went to my students’ home as exchangestudents found the local Sichuan snacks unappetizing and ended up eating friedchicken in the fast food restaurant everyday.

China being such a large country - with apopulation about 12x Japan’s - Chinese immigrants are just more numerous, allover the world! And Japanese cuisine arrived in the West more recently and ithas probably never been quite as widespread. Paradoxically, that might meanthat it gets a higher status - precisely because it’s rarer. Also, mostly,people just know sushi, and sushi is raw or freshly cooked fish and so it isvery important that it’s good quality food (or you might get sick!). So it’sbeen a bit difficult to do cheap sushi. In a sense, while it doesn’t have moreinfluence than Chinese food, it might have more prestige.
