This is my favourite thing in almost any fighting film.

That's because it was being fairly realistic. I love that shit.
Stuff like IP man though are cinematic fights to wow you and show skill and all that.

The fights in Ip Man are kind of a combination.
When he takes on the 10 black belts I'd say like 80% of the fight is Ip Man going to town on one guy while all the others awkwardly dance around. But there are a few parts where as many as 3 all attack him at once and he fights them all off.
The scene immediately preceding that has one of the other masters from Ip Man's town fighting 3 guys at once and that scene is pretty great because it actually has all 3 of them working together. Anytime the Master gets one of them down and tries to disable them, either one or both of the other fighters land blows on him to prevent that.

I like that part on The Protector where the guy breaks like 100 peoples bones

And he’s gonna be the captain in Mulan! He’s gonna punch Huns to death and it’s gonna be great

While filming Ip Man 3, crew members were afraid that Mike Tyson, who had been a professional boxer, would forget the choreography and throw real punches to injure Yen. However, it was ultimately Yen who fractured Tyson's finger while using his elbow to block Tyson's punches.
Guy number 8 should have given up after the first 7 went down.

I would guess Guy 8 had only noticed Guy 1, 2, and maybe 3 go down before he got dropped.
Yen is FAST.

Yen joined a Chinatown gang in Boston, MA, in his early years. He was a very curious teenager who sought to exchange martial arts knowledge with people from different martial arts backgrounds, which led to him gaining profound knowledge in practical martial arts and having a reputation as a street brawler.
This honestly sounds like part of a superhero origin movie

His wiki page is definitely one of the more interesting ones I've read. At one point it says something about Jet Li and Jackie Chan both naming him as the "best practical fighter" in the entire Asian film industry.

He even stated himself, if MMA was a larger and more established sport when he was in his younger days, he definitely would be competing

I'm happy to have read that. Donnie Yen is also a very humble person, and pays respect to the greats such as Bruce Lee and Jackie Chan. I remember watching an interview where the interviewer questioned Jackie's real martial art ability but Donnie Yen quickly rebutted and even said if they fought of course Jackie would win, adding that he respects his elders

Give Jackie a ladder, a can of paint or a huge Ming vase and he's unbeatable.

They really need to make an Expendables type movie with all the major martial artist action stars. Jackie, Jet Li, Tony, Donnie, The Raid guys, etc.

Ip man is the boss imo. The fact his story is (mostly) true makes it so much more awesome.
Edit: 'mostly' might be a bit generous. The films are definitely based on a real person though.

I agree. That Ip Man scene where he takes on 10 black belts was just too overwhelming.
