Aside from the numerous regions of China that each have their own flavourings from herbs the millions of different dishes are all cooked by stir-fry steaming and boiling that makes the food keep it's flavour.

We are very blessed here in Toronto that we have many fabulous chefs who have immigrated from China and many people all over the world have said that we have the best Chinese food in our 4 Chinatowns.

Also what other restaurant can you feed 10 people a 10 course meal at $120-150 including tip and tax? No Wine of course. Most chinese restaurants are not licensed. So if you must have alcohol with your meal then have a cocktail hour before the dinner or after.  Typical and average dinner for 4 can cost $40-55 including tax with servings large enough to still take food home for another meal.  Remember this is family style or communal dining. Dishes are large and you order for everyone at the table not just for yourself.
Go enjoy! You won't regret it.

The Chinese follow the spiritual teaching of balance signified by yin ("cool") and yang ("hot"). This philosophy encourages the Chinese to find a balance in their lives including in the foods they eat. While preparing meals the Chinese may strive to balance the color texture or types of food they choose to eat. Personally Chinese food is NO.1 :-P

The question might just as well be written "Why do people like food?"  You don't need "non-Chinese" and "Chinese".  Why do non-Italians eat so much Italian food?  It's good.  Why do pasty white people like soul food and Mexican food?  It's good.

And folks please stop repeating silly adages as though they're gospel truth.  Of course the Chinese don't identify their hundreds of different styles of food as "Chinese Food" but neither do the Canadians or Americans or Italians or Spanish.  But it's silly to say that the Chinese refer to it simply as "food" just as the French don't say "Let's go out for French food" nor Americans say "I feel like American food tonight".... 

还有，朋友们，你们能不能停止对那些简单的事实一而再，再而三的废话。中国人当然不会把他们数百种不同品味，风格各异的食物叫做“中国菜”，加拿大人不会这么做，美国人、意大利人、西班牙人都不会这么做。那些说中国人只是简单把他们吃的东西叫做食物真的很愚蠢，法国人不会说“让我们出去吃些法国菜吧”，美国人也不会说“今晚我想吃美洲菜”……

WITHIN THEIR OWN COUNTRIES they (the Chinese French and Americans) will specify what type of food they feel like eating and/or discuss among themselves.   People saying that the Chinese just call it food lead me to believe you've never had to plan lunch or dinner with a bunch of your Chinese friends. In Chinese cities the dinner discussion will be along the lines of...
How about hot pot?
Naaah I feel like barbecue.
Oooh Mongolian barbecue there's a place nearby.
Awe I was thinking of trying the new "Choo Chow" place.
How about dumplings.
Shanghainese is always good.
There's a Taiwanese Beef Noodle shop in the market.
No one wants seafood?
The dim sum joint has a discount after 2:30?

The American version of that would just substitute the various styles (and ethnic types) for all those Chinese varieties.  No one really says "Mmmm!  Food good.  Must eat some soon."

Because of how varied it is. Due to the rich culture and sheer size of China there is an entire continent’s worth of cuisine in China. There is markedly different cuisines in North West South and East China so different sometimes you can’t tell they’re both Chinese.
So inevitably you will find some sort of Chinese food that you like. Don’t like strong tastes? No problem we have plenty of light tasting dishes. Like soups? Sure which one of our literally thousands of soups do you want? Feel like eating a dish consisting of fish intestines mammal hearts and legs of two types of insects? We’ve got a few of those in Southern China.

为什么如此多的人喜欢中国食物?
因为它是如此的多样性，由于中国丰富多彩的文化和广阔的地域使得中国有一整个大陆美味的佳肴，中国东南西北各个地方的菜肴都很不一样，以至于有时候你不敢相信他们都是中国的。

If you love to have dinner in a western restaurant you will go into it again and again because the taste is always the same. The restaurant will write all the tips exactly about the meal. In China all the Tips are remembered by the cooker and he rearly tell anyone else except his sons/daughters/apprentices and the cooker don’t belong to the restaurant they will move one restaurant to the other. So even just on simple dish are different that are depend on the cookers. Many people love to taste different kind of food so Chinese food is the best one you will never get tired of the taste.

如果你喜欢去西餐厅吃晚饭，你会因为（喜欢的菜品）味道总是一样的，而接二连三地去品尝它。因为西餐厅有做出这些美食的完整的方法（技巧）。但在中国，所有烹饪的方法只有厨师才知道，他极少会告诉除了他儿子、女儿或者徒弟以外的人，并且厨师们不会只在一家餐厅工作，他们也跳槽去别的餐厅。所以即使是一些简单的菜，它的味道也是不一样的，这取决于出自哪个厨师之手。很多人都喜欢品尝不同口味的食物，那么中国菜就是最好的选择了，它多种多样的口味永远不让你觉得厌倦。

Some Unusual greens and meats are made into food. In Guangdong I even taste the soup of flowers of pumpkin the fried leaves of pepper chili. This kind of things will never be made of food in any land beside China. What is important it tastes good and I want to try again.

If you are Chinese and you once stayed in the United Sates for several weeks then you must know the answer why foreigners do like Chinese food.

I attended Duke Summer Session this summer and spent 4 weeks in Durham NC. At the beginning I was attracted by a variety of exotic things. And the people there are very nice. The campus is really beautiful and vigorous. It seems that everything was great until I found out that the food there was so different from Chinese food. The biggest difference lies in the variety of food available to eat. It seems true that Americans always eat burgers sandwiches hotdogs and nothing else. However there are thousands of cuishines in China. Even though your taste is very unique there must be some cuishines sastify your tongue and stomach.

今年夏天，我加入了杜克大学的暑期班并在北卡罗来纳州的达勒姆呆了4周。开始的时候我被各种异国情调所吸引，当地人非常友善，校园美丽而又充满活力。所有的一切都看似十分美好，直到我发现当地的食物与中国的食物是如此的风格迥异。最大的不同是食物种类的多寡。美国人貌似就只吃汉堡、三明治和热狗。而在中国，有数以千计的菜式可供选择。就算你口味独特，也必然有你喜欢的。

So during that period I felt homefoodsick a lot. ^^
