我和我的妻子的爱好是美食与烹饪。我比较会做中国菜,我也知道中国菜步骤很繁琐,我们回到美国就先开始做中国路边餐车,专门做杂粮煎饼。美国网友:有超级多的中国故事里,人们因为在美国做那个(煎饼果子)发家致富……我认为这故事之所以传的这么广,就是因为大家都相信“中国菜就是牛逼”这说法 。

Food and cooking is my passion (my wife's as well), and I've become quite good at making Chinese food. I know it's a hell of a lot of work, but we're most likely starting a Chinese street food truck when we move back to America. We would specialize in 杂粮煎饼.(Here's a baidu image search.)

I haven't met a foreigner who didn't think these were the shit. Now, altering the flavor for Americans, using better ingredients, and marketing them as Chinese wraps/burritos would, I believe, make these a hit. These things also smell amazing, so if anyone were to take one back to their office everyone would be asking what it is. When I was studying Chinese, if anyone brought one back to the classroom it was pretty much guaranteed that three or four people would go out to get one as well.

外国人都觉得这没戏,但我会根据美国人的口味,用更好的配料,当成中国的煎饼卖。我相信会火啊。杂粮煎饼实在太香,如果有人把它带到办公室,同事都回来询问这煎饼。我之前在中国学习,当我买了杂粮煎饼去教室,保证有三,四个同学会出去买它。

Anyway, I guess I'm just looking for some validation aside from my personal experience. What do you think of these? Think they would make it in the west? Imagine these with better quality shredded beef instead of that shitty fake sausage they often use... omg

There's a ton of Chinese news stories about people who have made bank selling exactly that in USA... I assume the reason these are so widely disseminated is that the affirmation of the superiority of Chinese cuisine.

I was going to reply with the same thing, every now and then you can hear somebody bought a house after opening a jidan bing/ some other variety of a pancake stall. Plenty of articles online.
Now, what puzzles me is nobody thought of opening a baozi place. They are fucking awesome, steamy, easily portable, non-greasy (well, to an extent), can be made wirth different fillings, I am sure they would be a blast anywhere. I am from a small Europan country, have travelled a bit around Europe and have never seen them. My colleague from NY said that he hasn't seen baozi over there neither, despite the fact there are several China Towns.

I seem to remember some guy in NYC opening a boazi stand. I personally don't really like baozi, so I wouldn't do one, but I'm sure they'd be popular!

我记得听说过有啥人在妞儿越是开过一个包子摊啊。我个人不太喜欢包子,所以我自己倒不会干,不过我肯定包子会受欢迎的。

Finally a post on the Chinese Crepe. I am going to validate the crap out of this.
A bit of background for those who many not know: In northern China, it is generally referred to as 煎饼果子 (果子 aka 油条 being that fried dough which is a tasteless version of churros). If you want the best 煎饼果子, go to Tianjin. I have eaten it across much of the guo and the problem with most places is that they add too much wheat flour which makes it chewy. The correct blend IIRC is mostly coarse grains such as green bean flour. What gives 煎饼果子 its authentic flavour is the trinity of green onions, sweet bean sauce and egg.
Once you get the blend down, it will cost you pennies to make a crepe and make you dollars to sell. As for the Americanization, I think there are multiple ways you can go about this:
Bacon: 'Merica! You can even tap into the breakfast burrito alternative, downside to that is you have to wake up early for the pre-work crowd.
Mexican fusion: This has been all the rage since some guy in NY put boggugi into a burrito, you can mix and match here between tradition meats like polo, chorizo (soyrizo). Huevos dishes. Don't forget guacamole.
Jap/Korean fusion: this is very helpful when your city has got a large Asian population.
Deep fried: you can even go for Shrimp Tempura, downside here is you need a deep frier which in the tight environment of a food truck is slightly dangerous. Also it is a bitch to clean.
Nutella: It worked for belgian waffles so there is no reason to assume it would not work here.
Braised meat: Like Hong Shao Rou. You only have to do 1 big batch per day. Buy an electronic pressure cooker to make this process much much faster.
Vegeterian: Tofu miso maybe.
Vegan: no idea because I fucking hate these people
Paleo: again no idea, but the coarse grain is a great start.
One thing to look out for is food safety requirements. In California, you have to prepare your food in a certified kitchen.

总算有个说“中国可丽饼”的帖子了,我得给你们好好的说道说道。给那些没听过这东西的人一点背景知识:在中国北方这东西总体上被称作煎饼果子(煎馃子又称油条,就是一团炸面团,吉事果的没味道版本)。要是你想吃最好的煎饼果子,你得去天津。我在这国家的大多数地方吃过它,大多数地方都有一个问题,他们加了太多的小麦粉让它有咬劲儿。正确的配料如果我没记错的话应该是绿豆粉之类的粗粮面粉。而小葱、甜面酱和鸡蛋的相互交融让煎饼果子最终形成了它独特的风味。
当你搞明白配料之后,你买齐材料花费并不多,卖出去赚的也不少。至于有人想把它给美国化,我觉得有几个办法可以试一下:
培根:Merica,你可以试试用这个替一下你的早餐墨西哥卷饼,不过你必须要早起做准备才行。
墨西哥风味:自从有个家伙在纽约把boggugi放到墨西哥卷饼里以后风靡一时。你可以多试试传统风味肉类的组合,像polo,辣香肠,鸡蛋,别忘了放色拉酱。
日/韩风味:这一招在你们城市里有很多亚裔的时候特别好用。
油炸:你甚至还可以放炸虾天妇罗,不过这样的话你就需要一个大炸锅,而在一个紧凑的餐车环境中这又有点危险。还有这样清洁起来很麻烦。
榛子酱:这东西对比利时华夫饼都搭得上,没理由不搭这个。
炖肉:就像红烧肉之类的。不过你一天至少要做一大堆。你可以买个电压锅让这速度大大提高。
素食者:或许可以试试豆腐味增。
严格素食主义者:我不知道我TMD恨死这帮人了。
古代人:我还是不知道不过首先可以试试粗粮吧。
还有一个事就是要注意一下食品安全要求。在加州你只能在一个有合格证的厨房做饭。

Awesome ideas! I've thought about a dessert version with nutella/peanut butter. I don't really like sweets though, so haven't thought about it too much. For vegans, just throw a bunch of lettuce or something. Some braised meat is awesome sounding. Hong shao jianbing sounds amazing.
I've been researching the shit about foodtrucks, they just look like a giant headache. But still cheaper than an actually restaurant. A food stand would be ideal. We'll see.

Yeah, food truck actually has a large startup cost. In California it is about 60k - 100k. There is also quite a bit of bureaucratic headache, since your food and truck certifications are split between FDA, state laws and city zoning laws. If you already have a friend in the restaurant business it can help you a lot.
Also about marketing, your first batch of Yelp reviews are very important. You can use your friends and family to help. You can also pay for agencies that write reviews for you (only do this when you don't have enough reviews as this can come to bite you in ass). And pay Yelp to put your business in front of the search. Don't forget to add your business (if in fixed location) on google maps.
Also brand your food truck in easily recognition name and color like Chairman Bao

对啊,餐车实际上有个非常高的启动成本。在加州这大概要6万-10万刀左右。这其中还有好多烦人的官僚主义流程,因为你的餐车证要被FDA、州法和地区法分开审查。如果你已经有一个干饭店生意的朋友,那才是帮了你大忙呢。
另外关于营销问题,你第一波的Yelp点评超级重要。你可以让你的朋友和家人帮一下。你也可以找水军刷一下好评(仅在你没有足够多评论数的时候用这招要不这可能是你的黑历史)。别忘了给Yelp钱让他们把你的生意顶到搜索前端。另外记得在google地图上给你的小店添加位置(地点固定的话)。
还有给你的可移动餐厅起个好辨识的名字和颜色,比如 Chairman Bao!希望你的煎饼车取得成功!

Depends where you take it. Where I live, these are already readily available due to the large Chinese population.

So pretty much a pita or a wrap? A Jianbing wouldn't be anything that special where I lived in the US, but if marketed towards the Chinese living overseas, it might have a chance near a university campus. The US already had dozens of different kinds of wraps, burritos, pitas, this wouldn't fare any better.

所以感觉上这是个圆面饼或是一层皮?在我所居住的这个美国城市,煎饼没啥特别的,但如果目标受众是海外华人,这摊子应该尽可能开到大学校园附近。美国已经有了超多种不同的面皮、卷饼、圆饼, 煎饼果子不会比他们好到哪里去吧。

Depends. I havent been to the US but I'd assume you already would have a shit ton of Mexicans competing against you with their superior tasting (best in the world IMO) cuisine. I dont think it would be a hit but you could probably survive off it. I know Chinese people dont like Mexican food so you should give it a shot in a place with a lot of Chinese expats

Interesting. I personally don't believe in a superior cuisine, mexican is awesome, as is chinese. Apples and oranges, man. I don't actually think of an entirely different cuisine as direct competition, depending on location, of course. Just filling a different niche.
