Despite the risks, officials in Saga prefecture, western Japan, are calling for an end to the decades-old ban on serving the liver – considered by some to be the tastiest part of the fish – in restaurants.

With help from a local fisheries firm and university researchers, the officials claim they have perfected a method of farming the fish that ensures the liver contains not a single trace of tetrodotoxin. If digested, the neurotoxin causes numbness around the mouth, followed by paralysis and death by asphyxiation. There is no known antidote.

The poison in the fugu is produced when the fish feed on poisonous starfish, snails and other creatures. Rearing the fish on food that is toxin-free removes the risk, or so the theory goes.

But owners of hundreds of fugu restaurants in Saga have warned that relaxing the law could end up killing diners.

There is no good reason to serve the liver of a Fugu - Yoshinori Yamaguchi who wants to do allow the sale of this is simply crazy.

How and when did people first work out which bits of the fugu were edible and which insanely toxic, and how many lives were lost in the process? That's what fascinates me.

Why is what fascinates me? A person must be insane to be so obsessive about eating so dangerous a fish. I seem to remember reading in the Graun a couple of years ago that a group of sushi "connoisseurs" were unable to distinguish sushi from cod in an extended blind tasting test. Which, I guess, says it all.

One theory is that even the 'clean' bits of the fish contain trace amounts of the toxin. As we know, human beings quite like non-deadly doses of many toxins, because they tend to be highly stimulating. As this theory goes trace amounts of fugu toxin act as an stimulant and even an aphrodisiac, though of course it might just be the adrenalin jolt that comes from dicing with death and worrying, after you've swallowed, if you now have only a matter of hours to live.

That makes no sense whatsoever. Cod is a type of fish; sushi isn't, although it may contain fish. It's like saying someone can't distinguish curry from chicken.

Fukushima is in the far north west. So as safe as eating any fish from the Pacific.

Liver, not the fish. Different areas of Japan have different local foods. Saga is trying to push this one. Saga is a rural dump that needs tourism. Food tourism is huge in Japan.
