Millions of people are putting themselves at risk by cooking their rice incorrectly, scientists have warned.
Recent experiments show a common method of cooking rice — simply boiling it in a pan until the water has steamed out — can expose those who eat it to traces of the poison arsenic, which contaminates rice while it is growing as a result of industrial toxins and pesticides.
The chemical has been linked to a range of health problems including heart disease, diabetes and cancer, as well as development problems.
While it is generally believed traces of arsenic are expelled when the rice is cooked, it has now been claimed this only takes place when the rice is soaked overnight.
Andy Meharg, professor of biological sciences at Queens University Belfast, tested three ways of cooking rice for the BBC programme 'Trust Me, I’m a Doctor', to see whether it altered the levels of arsenic.
In the first method, Professor Meharg used a ratio of two parts water to one part rice, where the water was “steamed out” during cooking — a method commonly used.
He found this left most of the arsenic present.
By contrast, when the he used five parts water to one part rice and washed the excess water off, levels of arsenic were almost halved, while in the third method, in which the rice was soaked overnight, levels of the toxin were reduced by 80 per cent.
The safest method of cooking rice is therefore to soak it overnight, then wash and rinse it until the water is clear, before draining it well and boiling in a saucepan, with a ratio of five parts water to one part rice.
According to 2014 research from Channel 4’s Dispatches and the Institute for Global Food Security, around 58 per cent of rice-based products in the UK contained high levels of arsenic. However, new legal limits were introduced last year by the EU in response to safety concerns.
根据第四台《Dispatches and the Institute for Global Food Security》在2014年的研究,英国生产的58%的大米含有大量的砷。

I've read multiple articles on this sudden panic, and not ONE of them gives the amounts of arsenic found in the rice to begin with, nor do they mention what is considered to be a 'safe' level of arsenic.
Clearly there must be some safe level, as they're not saying EEK - Don't Eat Rice, EVER!
Sounds like a ~Doom n Gloom of the Day~ hyped up click bait idea to me...

I don't want to eat any rice cooked in his way. It must taste horrible. I don't know if his 'normal way of cooking rice' involves washing/rinsing it. I know some people don't wash rice at all. Rice shouldn't be soaked before being thoroughly washed/rinsed. Otherwise it will absorb the dirty water and smell of bran. It should be soaked afterward then cooked with a ratio of 1.2 parts of water to one part rice.

The entire rice-eating population of countries like India must be sh*tting themselves...

Just tell us how many metric ton per serving we must eat before any health risk at all.

We are apparently doomed, whatever we eat, so we may as well stop eating anything, fnckwit.

I'd rather stop cooking rice at home than eat some mush that's been soaked overnight.

small doses of arsenic prevent hair loss ;-)
I'm Chinese and this is utter rubbish, if you soak the rice overnight then you will be eating wallpaper paste the next day!

Of course this article is utter rubbish, just as anyone who says "Trust me, I'm a doctor", that being an appeal to authority in lieu of presenting hard evidence. ;-)

None of this has anything to do with additives or pesticides, as some people are assuming, and eating organic rice will not make any difference. Arsenic is present naturally in the environment and the rice picks it up and concentrates it as it grows.
One problem with soaking rice and then throwing away the cooking water is that many of the vitamins and minerals in rice are water soluble, so a lot of the nutrients will go down the plughole, along with the arsenic.
