While most foreigners won't go beyond a rump steak or a hamburger when it comes to eating beef the French will pretty much eat every part of a cow bar the hide and what's more they'll call it a delicacy.

French chef Iman Bogen says we need to open our eyes and mouths to some of France's more stomach-churning delicacies.

"When I first tried snails (escargots) as a kid I never wanted to taste them again. But once I tried them with garlic and parsley butter I loved them and was addicted" he said.

The thought of putting a cow's tongue in your mouth may seem revolting but Bogen says the trick to cooking and eating cow's tongue is to disguise the fact that it is in fact a tongue.

Rabbit used to be quite a common dish in the UK until they made the film Watership Down. Then it just didn’t seem right to eat cute bunnies anymore. But the tradition lives on in France and Bogen says there are steps to take to get past this psychological barrier.

Udders are another part of the cow’s body that perhaps suffer from an image problem. When it comes to persuading Anglos of the merits of getting your knife and fork into them “You just have to open yourself up to new experiences” says Bogen. "And remember it's very good for you."

Frogs' legs

They're hugely popular in France where 80 million pairs are gobbled up every year. You can fry them boil them sautée them.. in fact you can eat them almost any way you like and they taste like a kind of chickeny fish.

This is often translated as 'sweetbread' but ris de veau is basically the culinary name for calf’s pancreas. Doesn’t sound too appetizing to you?

There’s not much love for pigeons in general and even less enthusiasm when it comes to the thought of eating them. But in France the tradition of eating game birds goes back centuries and it needs to be kept alive says Bogen.

Snails the most famed French delicacy beside frogs' legs are another of those things you wouldn't usually imagine on your dinner plate.

Although kidneys are by no means unique to France the French do love a good rognon and they are a common sight on menus. Bogen says there’s no reason expats shouldn’t have the appetite for a few.

This sausage has been frightening foreigners for years probably because it's made with easily-identifiable pig’s intestines. Another turn-off for the more faint-hearted among us can be the pungent smell.

Steak tartare

The sight of a Frenchman wolfing down a steak tartare (chopped up or minced raw meat) has shocked many a newly-arrived foreigner in France. To many of us steak tartare looks like it belongs in a polystyrene box on a supermarket shelf not on a plate at a brasserie. But Bogen disagrees.

It’s not so much the taste of foie gras that puts some people off but all the force-feeding of geese and ducks that goes on before it ends up on our plates. Forget about all that says Bogen.

Cows are not known for being the cleverest animals but once their brains end up on a plate they come alive especially with the help of a Gribiche sauce. Bogen has an easy solution for those who are not fans of eating veal's brain.

Oursins

Just as the French will eat pretty much any part of the cow’s body they’ll also eat almost anything that comes out of the sea including 'oursins' or urchins as we call them.

And are you comparing "real French food" (as in served and eaten in France) to "real" Japanese food" (as in served and eaten in Japan)? If it was in restaurants in other countries then its not "real" french/japanese food restaurants always modify the menus/ingredients to match the local palates.

Tartare isn't just a french invention I've had it in nepalese and polish restaurants before. As for frog's legs they're nice but there's not enough meat on them to make it worth the effort of eating them.

There are even Japanese chefs who work in French restaurants to understand the richness of its dishes...and the good restaurants in London is mostly continental cuisine — and the English ones are called 'greasy spoons'...LOL

As an andouillette lover I can tell that a low quality andouillette can be really disappointing.

BUT if you can buy a real andouillette (from a good porc butcher not from a supermarket) and simply broil it on a bbq (just a bit longer than a sausage) then you just eat it with some mustard (from Dijon the real one). And THEN I would be surprised if you tell me that you don't like it.

It's a speciality at Bistrot du Pont in Troyes one of my favourite restaurants. The waiter persuaded me to try it said it was delicious and promised to exchange it if I didn't like it. The smell was too much for me so I sent it back untouched.

It's true it doesn't smell good at first. But it tastes much better than what it smells. Take cheese : it smells awful but it's divine. Andouillette is simply good. And it's not that different from what you are used to but even if it is your palate will get used to it.
As you already know a place where they know how to cook it don't miss this opportunity ! Tomorrow will be too late. :)

My partner once ordered Andouilette at a country restaurant in France. He ate a few mouthfuls but couldn't manage anymore. He looked tortured. He took the leftovers back and gave them to our dog. She took one sniff and wouldn't touch it!

We eat all of this in the South (US) except utters. I don't recall any of my kin cooking up utters but we do fry up just about every part of a pig including ears snout feet and testicles.

Maybe because of bias. The trick is to get people to enjoy the taste of the food before telling them what it is made of. If you tell them before the idea of the food hinders its taste. ,

Eaten every one except oursin so I'll try that next time I'm out there. Don't like snails feel sorry for frogs can't get my head round raw steak although I like my steaks rare. As for the rest of it; Bring it on. :-)

I've had a number of them. Here's my Andouillette story. My wife and I were on our first trip to France and were catching a train from Gare du Nord towards the south. We had a few hours to wait so we found a nice but crowded place to eat. Tables were cheek-to-jowl close. There was a French couple at the table next to ours just a foot or so away. I looked over the menu and ordered what I thought was andouille (spicy Italian sausage) but you know what I got. The French folks had ordered burgers and fries. My dish arrived and I took a bite. Then one more very small one. I covered it up with my napkin and finished the first bottle of wine then ordered another. The locals were laughing uncontrollably at the American who'd ordered pig intestines stuffed in pig intestines cooked in urine.
We used to watch Anthony Bourdain when he did his more food oriented shows ... there was almost nothing anywhere in the world he would at least try. But Andouillette is his "bridge too far".

我们过去经常看安东尼主持的美食秀…全世界任何地方的食物,他几乎都尝遍了。但是肠包肚还是他的“遥远的桥”(电影,讲述了一场艰难的攻防战争)

"cooked in urine" ??? Where did you get that from ? And what kind of country do you think France is ? Some third world uncivilized hamlet ?
This is typically the kind of stupid bias I can't stand from picky foreigners. Some people seem to think that outside Mc Donald's it's the third world.
Well... If this is what you think you should never leave the US. This is where you belong. The world is too big for you.
Anyway it was not a good idea to try an unknown dish in a random tourist trap of the Capital especially around Gare du Nord. And by the way somethiong else is wrong in your story : it's not possible to travel towards the south from Gare du Nord...

Sorry but you are 100% wrong about the ability to travel south from Gare du Nord. Your ignorance of Paris and France is telling.
And I guess you can read very well either. I didn't think I was ordering "an unknown dish" but I got an unknown dish. If you ever had the disgusting dish you might know it smells like it was cooked in urine.

Not too crazy about tripe but the others are delicious. Yum!! We're having rabbit tonight too. I had moelle de veau one time and it was pure comfort food.

I do find a lot of British to be what I'd call plain eaters & rather squeamish we are lucky to have the choice of good quality foods to choose & then create in our kitchen as someone said on another post about not telling before tasting I have an example i served ox heart brochettes to someone who said they are lovely after a few mouthfulls then spat the next mouthfull out after finding what she was eating. Some people also shop by price rather than quality ie battery chickens over free range horrible mousse English sausuages bacon packed with chemicals & water. look up the benefits of eating offal & a stuffed & roasted Ox heart takes some beating as does good old Brittish faggots & gravy
